You can make a huge batch of these to bring for office parties or meetings, family gatherings, Holiday celebrations and Bacon wrapped pineapple is perfect for gameday! These are so simple to make, and they take very little time to prepare.

This is also that one food that you would think takes a lot to make, however, there are only three simple ingredients that go into this dish.

            Should I use dark brown or light brown sugar?

Honestly, that is a personal decision, the dark brown sugar will have a stronger molasses flavor to it which will also enhance the combination of bacon and pineapple.

            How should I store what is left?

Simply place the remainder of what is left into a ziploc bag or into an airtight container. This can then be placed into the refrigerator for up to 4 days.

            Can I freeze this?

Place them into a freezer safe bag or an airtight container and then into the freezer. They can sit in the freezer for up to 3 months.

            Can I substitute the bacon?

You could certainly use turkey bacon or a plant based bacon. I have not used either of those, but I can imagine they would both work wonderfully.

What do you need to make Bacon Wrapped Pineapple

            24  1 inch pieces of pineapple, should use fresh, but canned pineapple will work as long as it has been drained real well

            12 strips of regular bacon, cut in half. You could use 8 slices of thick cut bacon, cut into thirds

            ½ cup brown sugar, I use light brown sugar, you could use dark brown.

            24 toothpicks used to hold bacon together

How to make Bacon Wrapped Pineapple

FIRST STEP:

Preheat the oven to 350*

Line a baking tray with aluminum foil and place a cooling rack on top. The rack will prevent the food from sitting in bacon grease and becoming soggy

Drain the pineapple, pat dry with a paper towel

SECOND STEP:

Cut pineapple into 1 inch pieces

Slice the bacon in half or thirds, depending on which bacon you use,

Wrap a piece of bacon around each chunk of pineapple and stick a toothpick in to keep the bacon together

THIRD STEP:

Roll each into a dish of brown sugar

Place onto the rack, on top of the baking tray

Bake for 25 to 30 minutes. Until the bacon is crisp

Remove and let cool for 5 minutes before serving
