Baked Strawberry French Toast

            French toast with strawberries is one of my all time favorite breakfast foods. Who am I kidding? I love Strawberry covered french toast for breakfast, lunch and dinner. The warm french toast, melting butter and the cool strawberries on the top? Yep, it is an ideal meal. But, people, guess what? I have a method of making this that is even tastier than how I mentioned earlier.

            When I am in charge of making breakfast, I really need something that can basically cook itself. My mind is not ready for thinking until I drink at least a pot of coffee. So easier breakfasts are the number one priority in this house.

This french toast bake is perfect if you have company that stayed overnight, or if you are hosting a meeting of some sort in the morning. This recipe is easy to make variations of all types. You can also add some crushed nuts on the top to add a bit of crunchiness.

You could also mix in some dried fruit with the bread chunks and let it soak overnight.

What if I forgot to prepare this dish the night before?

That is not a problem. It can be prepared right before you bake it also. The bread will not soak as long, however, if you just toss the bread a little more, without breaking them, this will get them soggy and soaked in the flavor.

Which bread do you recommend using for this dish?

There are so many great options in bread selections, almost any of them will work great. Personally, I prefer to use brioche or challah. I will say that if French bread is used, it really should be prepared the night before so that the thick crust has time to soften and soak up the flavor.

Can I use different fruits?

Of course you can. I just prefer the taste of strawberries over other options for french toast. You can use any other fruit, including peaches if you like.

What do you need to make Baked Strawberry French Toast

            1 pound brioche bread

            4 tsp butter

            1 cup of heavy cream

            2 cups milk

            8 eggs

            1 tsp powdered cinnamon

            2 tsp vanilla extract

            ½ pound fresh strawberries, tops off, cut into quarters

            2 tbsp brown sugar

            Powdered sugar for dusting

            Syrup (optional)

How to make Baked Strawberry French Toast

FIRST STEP:

Using butter, grease a 9 x 13 baking dish

Tear the bread into chunks and lay in the dish evenly

SECOND STEP:

In a large mixing bowl, stir together the milk, cream, vanilla, cinnamon and the eggs until well combined

Pour the mix all over the broken up bread in the pan

THIRD STEP:

Cover the baking dish and keep in the refrigerator overnight

Preheat the oven to 375*

FOURTH STEP:

Using your fingers, put the pieces of strawberry into the bread mix. Tucking them in as deep as possible. You want the strawberries to be dispersed evenly

Sprinkle the brown sugar on the top

FIFTH STEP:

Bake for 25 minutes until it begins to turn golden brown

Dust with the powdered sugar and serve right away.
