Awesome Recipe! It was for my cousin’s birthday and everyone thought it was delicious!

Delicious and very moist cake with just the right amount of scrumptious frosting.

It’s my favorite banana cake recipe now! Baked it numerous times and it’s always a hit.

This is one AMAZING recipe. My family really enjoyed it….and so different from recipes that make loaf-sized banana bread.

This is now my go-to recipe as well.

What do you need to make Best Banana Cake Recipe with Cream Cheese Icing

Banana Cake

1 cup ripe banana, mashed

2 cups all-purpose flour

½ tsp baking powder

¼ tsp bicarbonate of soda

¼ tsp fine salt

1 ¼ cups light brown sugar

½ cup unsalted butter, softened

2 eggs

1 tsp vanilla extract

Cream Cheese Icing

¼ cup unsalted butter, softened

4oz cream cheese, softened

1 tsp vanilla extract

2 cups powdered sugar

1 banana, sliced

How to make Best Banana Cake Recipe with Cream Cheese Icing

FIRST STEP:

Preheat an oven to 320F and line an 8” cake tin with parchment paper.

In a mixing bowl sieve the all-purpose flour, baking powder, bicarbonate of soda and salt, stir to combine then set aside the bowl of dry ingredients.

SECOND STEP:

In a separate mixing bowl add the brown sugar and softened butter, whisk together for 5 minutes until pale and creamy.

Then add the eggs and vanilla extract, whisk together to mix well.

THIRD STEP:

Gradually stir in the bowl of dry ingredients into the bowl of wet ingredients until just combined. Then add the mashed banana and fold through.

Pour the cake batter into the lined cake tin and smooth down, transfer to the preheated oven and bake for 45 minutes.

The banana cake is ready once risen slightly and golden brown, insert a toothpick or cake tester into the centre of the cake if it comes out clean then the cake is ready.

FOURTH STEP:

Remove from the oven and allow to cool completely in the cake tin.

While the banana cake cools prepare the cream cheese icing.

In a mixing bowl combine the softened butter and cream cheese, whisk until thick and creamy.

FIFTH STEP:

Then using a spatula fold in the vanilla extract and powder sugar until completely combined, set aside.

Once cooled, remove the banana cake from the tin and discard the parchment paper.

SIXTH STEP:

Spread the cream cheese icing over the surface of the banana cake to form a thick even layer, then top with sliced banana.

Slice the banana cake into 8 pieces and serve at room temperature.
