I made this for Sunday dinner and it was a hit with all three kids and my wife!

I made tacos for the boys and my wife and I. And I made ramen for my daughter and poured the the broth with some of the beef over it and she loved it.

 I will be making this again.

What do you need to make Birria Tacos

2 lb roast or stew meat 

Marinade:

1 – 7 oz can chipotles in adobo 

1 – 7 oz can chipotle sauce 

¼ cup vinegar 

1 can rotel tomatoes 

2 tablespoons garlic, minced 

½ teaspoon smoked paprika 

1 teaspoon cumin 

Stew:

1 onion, chopped 

1 cinnamon stick 

2 bay leaves 

6 whole cloves 

4 cups chicken broth 

Tacos:

Tortillas 

Green onion, chopped 

Cilantro, chopped 

Mexican cheese, shredded 

How to make Birria Tacos

FIRST STEP:

Blend all marinade ingredients and combine with roast or stew meat, marinate for at least 2 hours or overnight

SECOND STEP:

Place meat & marinade in slow cooker and stir in chopped onion, cinnamon stick, bay leaves, cloves, and broth

THIRD STEP:

Cook on low 6-8 hours, shredding the meat an hour before done

FOURTH STEP:

Place shredded meat in tortillas and top with green onion, cilantro, mexican cheese

Ingredients

  • 2 lb roast or stew meat 
  • Marinade:

This recipe is a little bit of work but you get great authentic restaurant-quality taquitos. So much better than the ones you can buy frozen. I’ve made this twice now and do not stray at all from the recipe. It’s perfect as written.
