Just one cup of cooked black-eyed peas otherwise known as cowpeas has 160 calories and a slight amount of fat.

Five grams of protein represents 9 percent of the daily recommended intake for men and 11 percent for women.

Like all legumes, black-eyed peas are an excellent source of soluble fiber. This helps prevent type 2 diabetes by keeping blood sugar in the balance after you eat.

Soluble fiber also binds to cholesterol and carries it out of the body. Women get 32 percent of their daily intake of fiber from one cup of black-eyed peas, while men get 21 percent of theirs from the same amount.

In the southern part of the United States partaking in black-eyed peas on New Year’s Day is said to bring prosperity in the new year. Typically the peas are cooked with either bacon, fatback, or some other pork product.

They also have diced onion, and are served with peppered-flavored vinegar or a hot dog chili sauce. Traditionally the meal includes collard, turnip, mustard greens, cabbage, and ham.

Since the peas swell during cooking this is where the prosperity symbolism comes from. The greens part of the meal is what symbolizes money; the pork represents going forward because when pigs root they go forward when foraging, and the cornbread stands for the symbol of gold. (Which normally comes with the meal).

What Size Crockpot Should I Use?

Black-eyed Peas in Crockpot Recipe

1 (16 ounces) bag dried black eye peas
2 cups cooked ham, cubed
1 leftover ham bone (or ham hock)
1 onion, diced
3 cups chicken broth
3 cups of water
½ teaspoon ground black pepper
½ teaspoon garlic powder
½ to 1 teaspoon salt

Directions for making Crockpot black eyed peas:

Inspect peas and remove any rocks or bad beans.

Rinse well.Dump all ingredients (except salt) into the slow cooker.

Cook on low for 6 to 8 hours or until the peas are tender.

Remove the ham bone and pull apart any meat from the bone.

Cube and return the meat to the slow cooker.

Taste and stir in salt as desired.

The prep time says 8 hours and cook time 7 hours for a total of 15 hours. Perhaps there is a step left out of the instructions that account for the additional 8 hours?

When working with dried beans you'll see on the package that they should be soaked between a few hours - overnight in water to rehydrate them!
