LOVED IT!! honestly I’ve never been an Alfredo person (I’ve never liked the taste) but my husband LOVES it.
I LOVED how this sauce tasted. The only thing I didn’t add was the nutmeg and I don’t think it would’ve made that much of a difference.

What do you need to make Cajun Chicken Broccoli Alfredo
2 lb Boneless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
2 tbsp Cajun seasoning
1 lb penne pasta
3 c broccoli florets
4 tbsp unsalted butter
2 tsp flour
1 tsp salt
1 tsp black pepper
1 tsp poultry seasoning
3 tsp garlic, minced (4 garlic cloves)
⅓ c white cooking wine
2 c heavy whipping cream
2 c shredded parmesan
How to make Cajun Chicken Broccoli Alfredo
FIRST STEP:
In a large cast iron skillet, preheat the oil.
While the oil is heating, in a large ziploc bag, add in the seasonings and the cut up chicken.
Close the bag and shake the bag until all of the pieces are thoroughly coated.
SECOND STEP:
Once the oil is ready to go, add in the chicken and cook for approximately 10 – 14 minutes until the chicken is completely cooked.
While waiting for the chicken, fill a large stock pot full of water and salt the water.
Bring the water to a full boil and then add in the pasta and cook until al dente.
THIRD STEP:
Then strain and put it back into the pot. Make sure to keep some of the pasta water and leave it in the pot with the pasta.
Once the chicken and pasta is done, steam the broccoli.
Add water to a large saucepan and place the steamer pot over it. Bring it to a low boil, add in the broccoli, cover and steam for just a few minutes.
FOURTH STEP:
You want the broccoli to remain bright green.
While the broccoli is steaming, in a small saucepan, add the butter and the garlic. Saute for 30 seconds.
Add in the flour and create a roux. Let the flour cook for approximately 1 minute.

FIFTH STEP:
Add in the wine and cook until the liquid has reduced by half. Then whisk the heavy whipping cream into the saucepan.
Whisk continuously until the sauce has thickened. Then add in the parmesan cheese and stir.
You can then serve up the dish in two ways.
SIXTH STEP:
First way:
Add the pasta into a casserole dish, top with the sauce and then mix together then add the chicken and broccoli on top and top with parmesan cheese.
Second way:
In the large pot of pasta, pour the sauce over the top and add in the remaining ingredients and toss together.

Family really enjoyed this. We made it twice. Once exactly to the recipe and another time with some changes. I found the original to be a bit too soggy for us.
This was so yummy the first time I made it just like the recipe stated. This time I’m using leftover roast beef instead of the ground beef.
