Cheeseburger Soup

I made this last night. And it was very good. Definitely making it again!

This was a very good soup. It was thick and cheesy with lots of veggies.

Made this for our neighbor that is stationed here!

His wife would make this soup for him and since he was far from home , He loved it and so did the rest of our neighbors! 

Comfort food supreme! No changes needed except salt and pepper preference! Nice, creamy rich soup!

What do you need to make Cheeseburger Soup 

1 lb ground meat 

1 onion, chopped 

1 celery rib, chopped 

2 cloves garlic, minced 

2 tablespoons flour 

4 cups beef broth 

2 potatoes, peeled and diced 

1 can diced tomatoes

2 cups cheddar cheese, shredded 

¼ cup ketchup

6 oz tomato paste 

2 tablespoons dijon mustard 

1 cup milk 

Garnish – toasted hamburger buns, shredded lettuce, sliced pickles 

How to make Cheeseburger Soup

FIRST STEP:

Cook the meat with onion, celery, and garlic until done

Stir in flour, cook for 2 minutes

SECOND STEP:

Add broth and potatoes

Bring to a boil, reduce heat and simmer for 10-15 minutes

THIRD STEP:

Stir in diced tomatoes, tomato paste, ketchup, mustard, and cheese

Bring to a gentle boil then stir in the milk

FOURTH STEP:

Garnish, serve!
