It is also definitely a kid-friendly recipe that is rarely turned down by even your pickiest of eaters.

Can I Use Chicken Thighs for This Recipe?

This is traditionally made using chicken breasts, but if you are like me and prefer dark meat, chicken thighs are a great choice.

They add a lot of extra flavor to the recipe and are ideal for making if you are on a budget.

Make sure you trim off any extra fat on the chicken thighs before adding to this recipe for the best result.

What Vegetables Can I Add to This Casserole?

My version contains corn as it is a favorite in my family, but you can definitely add in any vegetable you prefer.

This has often been made with broccoli florets, but I love the idea of using a bag of frozen mixed vegetables in this chicken and rice to add variety.

Other options to use would be green beans, asparagus, cauliflower, or carrots.

Can I use Different Cream Soups in this Creamy Chicken and Rice?

Yes! I love replacing one of the cans of cream of chicken soup with cream of mushroom soup or cream of celery soup.

This adds extra flavor to the dish. You could even add sliced mushrooms or chopped celery into the mix if you chose the alternate cream soups.

I have made homemade cream soups in the past, and prefer those over the canned variety when I have time or have some on hand.

If you have a good homemade cream soup recipe (like this creamy mushroom soup), you could also use it in equivalent measurements.

Begin this recipe by seasoning your chicken breasts well with salt and pepper.

Feel free to add any additional seasonings at this point that you prefer.

Next, you will place the rice, corn, and chicken into your crockpot and cover with the soup combination you have mixed together separately.

Cover and cook as directed.

When done cooking, serve as desired. I enjoy adding a bit of cheese on top to mix in and melt into the combination.

Ingredients

  • 2 cups rice
  • 1-10oz can corn (can use frozen)
  • 2 cans cream of chicken soup
  • PLUS 2 cans water
  • 3-4 chicken breasts
  • Salt and pepper, to taste

Instructions

  1. Season your chicken to taste with salt and pepper.
  2. Place the rice, corn and then the chicken in your crockpot.
  3. In a medium-sized bowl, combine the cream of chicken soup and water.
  4. Pour the soup over the crockpot and cover with the lid.
  5. Set on high for 2 hours, or low for 4-6 hours.
  6. Check the chicken with a meat thermometer for doneness, an internal temperature of 165F
  7. Taste and add more seasoning as needed.
