Meat Pies have been a staple around the world for generations. There are so many variations to the Country style pie. Meat pies are also called Shepherd’s Pie or Pot Pie.

The beef and vegetables form a crust or bottom layer, then topped with tomato sauce and rice. Then topped with cheese for a perfect meal at the end of the day.

Country Meat Pie is a comforting dish that is savory and hearty. There are some variations that can be made, but to get the full effect of the original Country Meat Pie try it using this recipe first.

Other vegetables can be added to this meat layer to make it even more filling and satisfying.

You could use a sausage, venison or even poultry for this dish if you choose to.

            What type of cheese is recommended?

You want a cheese that shreds and melts easily. The suggested cheese in this recipe is Cheddar Cheese, However, you could use a Monterey Jack, Colby Jack or any blend of cheese you would prefer.

            Do I need to add the breadcrumbs to the meat mix?

Since the bottom layer is the meat and vegetable combination, you do want a filler that will bind the meat and vegetables together. The breadcrumbs work perfectly, without being too heavy.

Once the Meat pie has cooled completely, it can be covered with plastic wrap, aluminum foil or placed into an airtight container. It will remain good for 3 to 4 days in the refrigerator.

            1 pound ground beef

            ½ cup bread crumbs

            ½ yellow onion, diced

            ½ green bell pepper, diced

            1-24 ounce jar Tomato sauce with herbs

            Salt and pepper to taste

            ½ tsp Oregano

            1 ⅓ cup Minute Rice

            1 cup Cheddar Cheese, freshly shredded

            1 cup water

            ½ tsp Salt

            ½ cup Salsa

            ½ cup Sour Cream

 

How to make Country Style Meat Pie

FIRST STEP:

Preheat the oven to 350*

In a skillet over medium high heat, brown the ground beef. Drain and season with salt and pepper

Combine ½ cup tomato sauce with the ground beef, breadcrumbs, onion and salt, black pepper, bell pepper and oregano.

Spread this mix at the bottom of a 9×9 baking dish

SECOND STEP:

In another bowl combine the remaining tomato sauce with the rice and ½ cup cheese

Spoon the rice mixture on top of the beef ‘crust’ layer

Cover with the remaining tomato sauce

THIRD STEP:

Bake for 25 to 35 minutes or until the rice is cooked

Top with the remaining cheese and bake for an additional 10 minutes

Serve with a spoon of salsa and a dollop of Sour Cream
