Very good. You can add diced up peaches, black beans, black olives if you don’t have cilantro you can add fresh basil.

Will definitely make again!

This is a great basic recipe. I made this a day ahead hoping the flavors would meld and ended up adding seasoning and lime juice.

Also, the avocado will darken with time, I recommend adding it the day you plan to serve it if making ahead.

Absolutely perfect recipe! Made it for a family get together and everyone said it was delicious.

What do you need to make Cowboy Caviar

1 Can Black soy beans rinsed and drained well

½ Yellow bell pepper diced

½ Red bell pepper diced

1 Roma tomato diced

1 Jalapeno pepper deseeded and diced finely

½ Red onion diced

½ tsp. Chili powder

½ tsp. Cumin

3 Tbsp. Olive oil

Juice from ½ a lime

Salt and pepper to taste

Cilantro chopped for garnish

How to make Cowboy Caviar

FIRST STEP:

Combine all of the ingredients into a large mixing bowl, and mix thoroughly.
