Cream Puffs are one of my favorite treats. I could eat them all day long, if my waistline allowed for that! Cream puffs are a standard treat in France, they are filled with a sweet custard or cream and then a light sprinkling of Powdered sugar is put over each one.

The puff itself is actually a dough called Choux pastry. It appears that it would be difficult to make, but you will be pleasantly surprised.

With this recipe, you will not need to be visiting your local bakery to purchase these. Once you realize how easy it is to make them, you will have requests for them quite often.

Making the classic Cream Puffs will take maybe an hour of your time, and very few ingredients that are already in your home.

Frequently Asked Questions:

            Can I make these ahead of time?

You can certainly make the shells a day or two in advance of when you plan to serve them. You do not want to add the cream to them until right before you decide to serve them.

            Can I freeze these?

These can be frozen, with certain stipulations. The cream must be completely contained within the puff. This can be done by hollowing out the puff or by putting just enough of the cream so that it does not go over the edges. The cream puffs should then be placed into an airtight container and frozen for up to 2 weeks. To thaw, leave the puffs in the refrigerator overnight.

What do you need to make Cream Puffs Recipe

            Puff Pastry

                        ½ cup whole milk

                        ½ cup water

                        8 tbsp butter, unsalted

                        1 tsp sugar

                        ¼ tsp salt

                        1 cup flour

                        4 eggs, room temperature

            Cream

                        2 cups COLD heavy cream

                        1 tsp vanilla extract

                        4 tbsp sugar

                       28 raspberries, optional, or 14 strawberries, cut in half, optional

                       Powdered sugar for dusting

How to make Cream Puffs Recipe

FIRST STEP:

Preheat the oven to 425*

Line a baking sheet with parchment paper

SECOND STEP:

In a saucepan combine the water, the milk, butter, sugar and the salt and bring to a boil

Immediately remove from the heat and add in 1 cup of flour all at once and stir with a wooden spoon

Once the flour is blended in, return to the heat and stir constantly for 1 ½ minutes to 2 minutes.

This will cook the flour, it will create a small film on the bottom of the pan and also bring the mix together in a smooth ball

THIRD STEP:

Place the dough into a large bowl and begin to mix with an electric mixer to slightly cool off the dough

After 1 minute, begin to add the eggs, one at a time and mixing between each

Beat for another minute until the mix is smooth

Transfer the dough to a piping bag or zipper bag with the tip cut off

Pipe 28 puffs,  keeping them 1 inch apart on the baking tray

FOURTH STEP:

Bake at 425* for 10 minutes

Do Not open the oven, then turn the temperature down to 325 and bake for another 20 to 22 minutes until they are golden brown

Remove and place on a wire rack to cool completely

FIFTH STEP:

To make the cream, combine the heavy cream, sugar and the vanilla

Beat on medium high speed until stiff peaks form

Transfer to a piping bag and fill the cream puffs

Dust with powdered sugar and serve
