Top those ingredients with the classic Thousand Island dressing and place it between two crescent roll layers and you have a meal that will drive everyone nuts.

This is one recipe that will be asked for numerous times. I know it is missing the Rye bread, but when you taste the Crescent Reuben Bake, you will not miss the Rye bread at all!

Could I substitute bread in place of the crescent rolls?
I have not tried that myself, however, I understand your thinking. I would suggest you follow the recipe at least once, and then feel free to change it up. If you do try it, I would suggest rolling the bread flat, so it is the same thickness as the crescent.
Can I make this ahead of time?
It is not suggested that this be made in advance too far. The risk of the crescent layers experiencing a texture difference is high. These should be made fresh and eaten right away. Once made, they can be stored for up to 2 days in the refrigerator as long as they are wrapped tightly.
Could I use a different meat?
Turkey is always a great substitute, then of course it would be called a Rachel Crescent Bake. Those are just as delicious however!
Do I have to use the Thousand Island Dressing?
If you choose to leave the dressing off, that is fine. The sandwich may be slightly drier without using the sauce.
Can I double the recipe?
You certainly could, you will need to use a 9×13 baking pan.

What do you need to make Crescent Reuben Bake
¾ cup Sauerkraut, drained well
1 tube Crescent Roll Dough
¾ pound cooked and sliced thin corned beef
8 slices Swiss Cheese
1 beaten egg white

How to make Crescent Reuben Bake
FIRST STEP:
Preheat the oven to 375* and spray or grease an 8×8 baking dish
Mix the Sauerkraut and Thousand Island dressing together

Unroll the crescent roll dough and cut in half. Roll out half to roughly 12 inches

SECOND STEP:
Lay that one half in the bottom of the dish and up the sides. Then pinch the perforations together, if they are still showing
Prebake this first half for about 8 to 10 minutes
Remove from the oven and lay 4 slices of cheese on top of the bottom layer

Top the cheese layer with sliced corned beef

Layer the Sauerkraut over the corned beef
Place the remaining four slices of Swiss Cheese over the Sauerkraut

Carefully place the second layer of crescent dough over the top and push the edges together with the bottom layer crust

Brush the top crust with the beaten egg white

THIRD STEP:
Place in the oven and bake for 8 to 10 minutes until the cheese is melted and the crust is golden brown
