This is a unique salsa that is crunchy, colorful, slightly spicy but oh so good. This Crisp Cucumber Salsa will turn heads and win over the pickiest of eaters. It is a refreshing version of a classic favorite Salsa.

I do suggest the freshest of fresh vegetables be used in the making of this Salsa. The amount of spice is entirely up to you and what your family prefers.

You can also eliminate the spice completely if you choose. The amount of jalapeno pepper you choose to add will give the spiciness to the Salsa.

            Do I have to include the Sour Cream?

The Sour Cream is added to balance out the flavors and tone down the citrus, just a bit. It will also add the creamy texture that is associated with Salsa.

            Can I make this Crisp Cucumber Salsa ahead of time?

This Salsa is delicious whether it is freshly made or if it has blended the flavors together in the refrigerator for up to 48 hours.

            How should I store the Crisp Cucumber Salsa?

Once the Crisp Cucumber Salsa is combined together, place it into an airtight container, covered and then into the refrigerator. The Cucumber Salsa will last for up to 3 or 4 days. I have frozen the salsa, but I do not recommend this. This Salsa tastes best when eaten immediately.

What do you need to make Crisp Cucumber Salsa

            2 cups Cucumbers. Peeled and diced, seeds removed

            1 cup tomato, seeded and diced

            ¼ cup onion, I prefer red onion for the burst of color. You can use a white onion if preferred

            2 tbsp Parsley, freshly minced

            4 tsp Cilantro, freshly minced

            1 Garlic clove, freshly minced

            ¼ cup Sour Cream

            2 tbsp Lemon juice, freshly squeezed

            1 tbsp Lime juice, freshly squeezed

            ¼ tsp Sea Salt

            ¼ tsp Cumin, ground

How to make Crisp Cucumber Salsa

FIRST STEP:

In a large bowl, combine the vegetables after they have been diced

SECOND STEP:

In a medium bowl, combine the lemon juice, lime juice and the sour cream along with the Cumin and Sea Salt. Whisk to blend completely

THIRD STEP:

Pour over the cucumber mixture immediately and toss gently to cover

Cover the bowl and place in the refrigerator for 30 minutes to one hour

Serve with Tortilla Chips
