Crockpot ham and bean soup is a classic in our area. It’s something that we’ve been making and eating all my life. There’s a few different varieties, some people include veggies, others not so much.

I like a bit of veggies included, it gives the recipe more depth of flavor and it also adds some color in an otherwise bland looking soup…don’t let the look of the white beans and simple ingredients fool you though, this recipe is bursting with delicious ham flavor.
One of the best things about Crockpot bean soup is that the beans really soak up all the salty goodness that comes from the ham and stock. This soup is indulgent and simple to make.

Here’s what you’ll need to make slow cooker ham and bean soup:
Making this tasty crockpot bean soup is simple. It’s awesome that the slow cooker does all the hard work so we can focus on other things while dinner makes itself.
You’ll need a meaty ham bone, just ask at the meat department if you don’t see any out for sale, you can also use the one from your ham at the holidays! This recipe also uses carrots, onions, celery, garlic, vegetable broth, dried great northern beans, salt and pepper, and some bay leaves.
Everything in this recipe is pretty straightforward and simple. The end result is what is truly amazing, the flavors come together so well everyone will devour their Crockpot bean soup.

If you like you can also add some ham to the recipe! It will depend how much meat is still attached to your bone when you start the recipe.
Can I used canned beans in this recipe?
I wouldn’t use canned beans in this recipe. The dried beans work well and they’re cheaper! It’s important to give the beans a long time to soak in the flavorful stock so that they take on those flavors.
If you want to use canned beans I would cut the cooking time back a bit, the longer cooking time is to give the dried beans time to rehydrate and cook properly.
How to make Crockpot bean soup with ham:
Now comes the fun part, everything goes into the slow cooker where the magic happens. Since we’re using dried beans, as they rehydrate and cook they have a lot of time to pull in all of that amazing ham flavor!
Place all ingredients in the slow cooker and stir to combine, making sure all beans are covered by broth.
Cover and cook on low for 8 hours or until the beans are tender.

Before serving, remove the bay leaves and the ham bone. Pick the ham from the bone and cut into bite size pieces. Return to the slow cooker and stir into the soup.

Crockpot Bean Soup

Ingredients
- Meaty ham bone
- 1 onion, diced
- 2 large carrots, peeled and diced
- 3 stalks celery, diced
- 1 (16 ounce) bag dried Great Northern beans, rinsed
- 2 cloves garlic, minced
- 5 to 6 cups vegetable or chicken broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 bay leaves
Instructions
- Place all ingredients in the slow cooker and stir to combine, making sure all beans are covered by broth.
- Cover and cook on low for 8 hours or until the beans are tender.

A slow cooker doesn't get hot enough to destroy the lectins in beans. I think your recipe is completely wrong and should not be followed. There are specific steps to take to remove the lectins from beans, and a slow cooker is not able to achieve that.
