If you love chicken pot pie you have to try this slow cooker version. I love to make Crockpot chicken pot pie even on busy weeknights!

If you are like me, the Crockpot is my go to. Of course I could make a lot of these recipes in the oven but honestly I would rather dump it all into the slow cooker and let it do the work for me!

This recipe for Crockpot chicken pot pie is easy enough that I can make it even on those busy weeknights when we’d usually be eating out…so it saves us money and we get to eat a home cooked meal. It’s a big winner and total comfort food.

Here’s what you’ll need to make Crockpot chicken pot pie:

We’ll need some fresh items as well as some pantry items so let’s take a look and you can make your shopping list! Check out the full amounts and nutritional info in the recipe card at the bottom.

From the pantry we’ll need flour, chicken gravy mix, salt, white pepper, and poultry seasoning. The fresh ingredients for this recipe are boneless, skinless chicken thighs, half and half, frozen mixed veggies, mushrooms, and refrigerated biscuits.

Most of these ingredients I keep on hand in the pantry or the freezer. It’s an easy meal to throw together whenever I get the craving…or a request from the family!

You can leave out the mushrooms if you have picky eaters or just don’t want to go out for them, it will still come out great without them.

How to make pot pie in the slow cooker:

In a small mixing bowl, whisk together the flour, gravy mix, poultry seasoning, salt and pepper and half and half. It will become like a thick paste.

Spray the slow cooker insert with cooking oil. Add the chicken thighs.

Spread the mixture from step 1 over the chicken. Secure the lid of the slow cooker and cook on high for 3 hours. 

Open the lid and add the mushrooms. Secure the lid and continue to cook on low for one more hour, or until the chicken is no longer pink in the middle.

Bake biscuits according to the package directions. While the biscuits are baking, add the frozen vegetables to the slow cooker and continue to simmer on low.

Remove biscuits from the oven.

Turn off the slow cooker, open the lid and top the mixture with the biscuits. Spoon the chicken pot pie mixture into a bowl and enjoy!

Crockpot Chicken Pot Pie

  • 2 ½ pounds boneless, skinless chicken thighs, cut into 1” chunks
  • ¼ cup flour
  • 1 package of chicken gravy mix
  • 1 cup half and half
  • 1 12-ounce bag of frozen mixed vegetables
  • 1 cup of sliced mushrooms
  • 1 tablespoon poultry seasoning
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 1 can of refrigerated biscuits

Instructions

  1. In a small mixing bowl, whisk together the flour, gravy mix, poultry seasoning, salt and pepper and half and half. It will become like a thick paste.
  2. Spray the slow cooker insert with cooking oil. Add the chicken thighs.

      It’s similar to heavy cream? I feel like you could substitute that if you have that!
