I like the flavor combination better this way. Also the corn, I use a fire roasted corn to add that smoky flavor to the dish. You can of course use tots and regular corn.

Frequently Asked Questions:

Can I use a different Cheese in the Casserole?

You could use a mild or sharp cheddar cheese if preferred. You could also use a Mexican blend to give a slight added flavor.

Can I make this in advance?

You could make this in advance, however, cooking it in the crock pot gives you that cooking time to accomplish other tasks. If you choose to make it in advance, you would simply need to reheat the dish to serving temp.

Do I have to use Italian Sausage?

Absolutely not! You can use Spicy or even a plain sausage. Try it with a breakfast sausage for another delightful flavor.

How do I store this Crockpot Cowboy Casserole?

When it has cooled to room temperature, place the leftover food into an airtight container and place in the refrigerator for 3 days.

This is wonderful when frozen. Simply thaw it in the refrigerator overnight and reheat either in the crock pot or in the oven.
