When the weather begins to get chilly, all I can think of is my list of soups that my family loves to eat on those cold evenings. The thing is that list of soups continues to grow constantly. There is no end to the variety of soups that can be made.

What I really love is when I find a recipe for a soup that can be made in the crockpot.

This recipe for Crockpot Lasagna Soup is one of my favorites. The great taste of my favorite Italian meal in a bowl!

            Can I adjust the ingredients or substitute?

Yes, you can certainly use different ingredients, use sausage instead of beef. You can make it with all vegetables. The soup recipe is completely adjustable and changeable to suit your family and their tastes.

            Will I still use the same cheeses?

This recipe does call for a set of three types of cheese, Ricotta, parmesan and Mozzarella. These cheeses melt to give the soup a creamy texture.

            How should I store any soup that is left?

Once the soup has cooled completely to room temperature, you can place it in an airtight container and place it in the refrigerator for three days.

            Can I freeze this soup?

I prepare the soup in large batches and freeze half of it many times. There may be a slight texture change, but it is so very slight you will not notice it.

What do you need to make Crockpot Lasagna Soup

            1 pound Ground Beef, lean

            ½ yellow onion, chopped fine

            1 red bell pepper, diced

            28 ounce can of Crushed Tomatoes

            14 ounce can of diced tomatoes

            1 tsp Garlic, minced

            1 tbsp Italian Seasoning

            4 cups Beef Broth

            ½ cup Ricotta Cheese

            1 cup Mozzarella Cheese, shredded

            1 cup Parmesan Cheese, shredded

            12 ounces lasagna noodles

How to make Crockpot Lasagna Soup

FIRST STEP:

In a skillet over medium high heat, crumble and brown the ground beef

Drain excess fat from the skillet

Spoon the meat into the crock pot

SECOND STEP:

Add in the diced onion and bell pepper

Then add in the diced tomatoes and the crushed tomatoes

Stir in the garlic and Italian Seasoning

THIRD STEP:

Pour in the beef broth and stir to blend all the ingredients thoroughly

Cover and cook on low setting for 6 to 8 hours, or high setting for 3 to 4 hours

When the cooking time has passed, break lasagna noodles into bite size chunks and combine into the soup

FOURTH STEP:

Place the cover on again and cook for another 30 to 45 minutes, until the noodles are cooked through

Serve hot with a spoon of ricotta cheese and a handful of shredded cheeses

  •             1 pound Ground Beef, lean
