Roasted Chicken Recipe
Gathering together with your family for a weekend meal is a tradition many of us continue well after our children are grown and out of the house. Sitting down with your spouse, kids, grandkids, or even just neighborhood friends and sharing a meal is a special experience.
For that event, you need a yummy and equally special meal. A roasted chicken dinner is a perfect solution. Tender pieces of chicken are served alongside slow-cooked potatoes and classic carrots, onions, and squash for a complete meal you can prepare in the slow cooker while you are at church on Sunday morning.
What Should I Serve with Roasted Chicken?
This recipe includes the classic potatoes and carrots that I have always served with a roasted chicken. I also included some squash, as it is such a wonderful vegetable that fits with almost any meal.
You could easily add in celery, onion, or even sweet potatoes to go alongside this roasted chicken recipe. Other options I often serve alongside this recipe are hot rolls, biscuits, and baked beans or coleslaw. The truth is, you can add any side dish to this and it will fit perfectly into the menu.
Can I Use a Poultry Seasoning Blend on this Chicken?
If you have favorite poultry or chicken seasoning blend, you can definitely substitute it in place of the spice blend I have listed.
While I love my blend of spices, I know there are some amazing blends on the market that others may prefer for this recipe.
- Whole chicken
- Yellow squash
- Black pepper
How to Make my Roasted Chicken Recipe
Begin by preparing your chicken. This includes removing the neck, giblets, and innards and discarding them. Some individuals like to rinse out their chicken, but this is up to you. Pat dry with a paper towel.
Spray or line your slow cooker, and then line the bottom with your potatoes, carrots, and onion before placing the chicken on top with the breast side up.
Season your chicken well, then cook as directed. You will be adding the squash toward the end of the cooking time.
Serve with your favorite sides, vegetables or casserole.
- 5 lb young chicken
- 7-8 small gold potatoes
- 1 bundle Rainbow Carrots (about 8 small carrots) cut in half
- 1/2 onion (quartered)

What Size Crockpot Should I Use?
For this recipe, I would use a 5-quart crockpot. You may also want to use a crockpot liner which allows for less mess when it is time to clean up. If you want to double your recipe a 10-quart crockpot may be more what you are looking for.
