I also included some squash, as it is such a wonderful vegetable that fits with almost any meal.
You could easily add in celery, onion, or even sweet potatoes to go alongside this roasted chicken recipe.
Other options I often serve alongside this recipe are hot rolls, biscuits, and baked beans or coleslaw. The truth is, you can add any side dish to this and it will fit perfectly into the menu.

Here is what you’ll need to make this delicious recipe for a whole roasted chicken in the Crockpot. You can use any size chicken but make sure you temp it to check that it’s cooked through before serving! Different sizes will require slightly different cooking times.
- Whole chicken
- Potatoes
- Carrots
- Onion
- Yellow squash
- Sage
- Paprika
- Salt
- Black pepper

How to Make my Roasted Chicken Recipe
Begin by preparing your chicken. This includes removing the neck, giblets, and innards and discarding them.
Some individuals like to rinse out their chicken, but this is up to you. Either way make sure you pat dry with a paper towel before the next step.

Spray or line your slow cooker, and then line the bottom with your potatoes, carrots, and onion before placing the chicken on top with the breast side up.
Season your chicken well, then cook as directed. You will be adding the squash toward the end of the cooking time.
Serve with your favorite sides, vegetables or casserole.

Crockpot Roasted Chicken Recipe

Ingredients
- 5 lb young chicken
- 7-8 small gold potatoes
- 1 bundle Rainbow Carrots (about 8 small carrots) cut in half
- 1/2 onion (quartered)
- 1 yellow summer squash (sliced)
- 1/2 tsp sage
- 1 tsp paprika
- salt & pepper to taste
Instructions
- Remove neck and giblets from young chicken.
- Rinse and pat dry with a paper towel.
- Spray slow cooker with cooking spray or line with a Crockpot liner.
- Line the bottom of a slow cooker with potatoes, carrots, and onions.
- Place the chicken over the veggies breast side up
- Rub the chicken with seasonings.
- Cover and cook on high for 4-5 hours adding the summer squash during the last 30 mins of cooking.
- Tips- cook until veggies are soft and internal temp of chicken is at least 165 degrees
