I made this for the first time for dinner at our ladies’ bible study and everyone said that it was great! It’s easy to make.
It came out fantastic. I will be making this on a regular basis. It’s perfect for the winter months

What do you need to make Easy Burrito Casserole
8 small flour tortillas
1lb ground beef
1 onion, finely chopped
2 cloves garlic, finely chopped
1 tsp ground cumin
1 tsp smoked paprika
1 ½ cups refried beans
1 cup cooked corn
1 cup tomato salsa
2 tbsp jalapeno peppers (optional)
2 cups Monterey Jack cheese, shredded
½ cup green onions, thinly sliced
How to make Easy Burrito Casserole
FIRST STEP:
Preheat an oven to 350F and grease a baking dish.
Place a skillet on medium heat and add the vegetable oil. Stir in the chopped onion and cook for 5 minutes to soften.
SECOND STEP:
Then add the garlic, cumin and paprika, cook for 1 minute until fragrant.
Mix the ground beef into the skillet and brown well for 5 minutes.
THIRD STEP:
Next add the refried beans, corn and tomato salsa to the skillet, simmer for 5 minutes to bring the flavours together.

Lay four flour tortillas into the greased baking dish then top with half the beef burrito filling, scatter one cup of cheese over the beef and top with jalapenos.

FOURTH STEP:
Then add a second layer of tortillas and repeat with the beef filling.
Top the baking dish with the remaining cheese and greens onions.

FIFTH STEP:
Bake the easy burrito casserole in the preheated oven for 20 minutes.
Remove the casserole from the oven and allow it to stand for 5 minutes before serving.
