Easy Fried Rice Recipe

            Inspired by my favorite Chinese Restaurant, I just had to let you share in this wonderful Chinese Fried Rice. It is so easy to make, and tastes exactly like what you get with takeout.

One of the best things about this recipe is that you can seriously customize it with your favorite vegetables. Whether that is carrots and celery, or broccoli and cauliflower.

The choice is yours. When we were living closer to the cities after we first got married, we always had one  day a week that we would go eat at the neighborhood Chinese Restaurant. That was our treat for making it through another week of adulthood.

            Yes, I know that sounds terrible. Actually we took turns cooking, so the odd day was for eating at our favorite place. I have to say no other location has ever been able to do food the same way. I seriously cried when they closed down. However, it also made me get in gear to replicate the way they had made theirs. I wanted mine to be the same. The perfectly cooked rice, the slightly crispy edges and the vegetables that were always perfect.

Frequently Asked Questions:

            Can I make the rice immediately before the fried rice?

For this dish, it is always best to use cold rice. You are better prepared if you can make rice ahead of time, so it is cold when you start the fried rice. Fried rice is meant to be somewhat crispy, so using warm or hot rice is not going to cook properly in the pan.

            Can I use oil for cooking fried rice?

No, please use butter, the butter is what makes the rice fry up the brownish color that it is meant to be.

            What type of vegetables do you suggest?

I use the vegetables that give the rice a splash of color. Carrots, peas, snow peas, cauliflower. You can use whichever you prefer. Sesame oil is a must add to the fried rice! Besides, when adding the Sesame Oil, you will see it is at the end. This is the finishing touch, it is what makes the rice taste so wonderful.

What do you need to make Tasting Fried Rice

            3 eggs, scrambled

            3 tbsp butter, divided

            2 medium carrots, peeled and diced

            1 small white onion, diced

            ½ cup frozen peas3 cloves garlic, freshly minced

            3 green onions, sliced

            3 to 4 tbsp soy sauce

            2 tsp Oyster Sauce

            ½ tsp Sesame Oil

            $ cups of cooked, cold rice

How to make Tasting Fried Rice

FIRST STEP:

In a skillet, melt the butter

Whisk or scramble 3 or 4 eggs

SECOND STEP:

Cook the eggs while stirring constantly

Remove the egg and set to the side

THIRD STEP:

Add another 1 tbsp of butter to the pan

When butter is melted, add in the peas, carrots, onion and garlic.

FOURTH STEP:

Season with salt and pepper to taste

FIFTH STEP:

Saute for  minutes, until carrots and onion are soft

Increase the heat and add the remaining butter, stir until melted

Immediately add in the rice, green onions, oyster sauce and Soy sauce

SIXTH STEP:

Stir well and saute for 3 minutes, stirring once. Remember you want to get the rice a touch crispy.

Add in the eggs and stir to combine

SEVENTH STEP:

Remove from the heat and add in the sesame oil

Taste, if wanted add more Soy Sauce to suit your needs
