This salad will make all other summer salads look minor in comparison. This Salad is a combination of Cauliflower, egg salad and bacon. Combine that with cheddar cheese and you have a treat  for a salad. The texture combinations and the flavor combinations are the bomb!

This salad could be used on croissants, bread, buns or rolls. I have been known to eat this as is, It saves me some carbs too.

The Cauliflower and Egg Salad with bacon is a unique twist for summertime.

A blend of vegetables with delicious and creamy egg salad, with crunchy bacon thrown in. This dressing is made with some Greek Yogurt which helps the calorie count.

            Is this a healthy salad?

Although it contains some mayonnaise, it is considered to be on the healthier end of the scale. Greek yogurt helps with that.

            How long will this salad last in the refrigerator?

As long as the Cauliflower, bacon and egg salad is covered or put into an airtight container, the salad will last in the refrigerator for 3 to 4 days.

            Can I freeze this Cauliflower bacon and Egg Salad?

I do not suggest freezing this dish. The yogurt and mayonnaise tends to change in texture when thawed.

What do you need to make Egg Salad with Bacon and Cauliflower

            1 head Cauliflower, cut into florets

            3 eggs, hard boiled and diced

            ½ cup Sharp Cheddar Cheese, shredded

            ¼ cup bacon, cooked and crumbled

Dressing:

            ½ cup Greek Yogurt or Sour Cream

            ½ cup Mayonnaise

            ½ tbsp Cajun Seasoning

            ¼ tsp Red Pepper flakes

            Salt and Pepper to taste

FIRST STEP:

In a small bowl combine the mayonnaise, Greek Yogurt, cajun seasoning and pepper flakes

SECOND STEP:

In a larger bowl combine the Cauliflower florets, the diced egg and the bacon bits

THIRD STEP:

Pour the dressing over the cauliflower mix and toss to coat well

Refrigerate 20 minutes or overnight to chill completely

  •             1 head Cauliflower, cut into florets
