How to Make the Best Blueberry Pancake Brunch Bundt

Share or Save for Later

This is easy and delicious to make, and it will quickly become a breakfast or brunch favorite. It is a yummy cake idea that is based on the use of pancake mix. It will have you feeling like your breakfast or brunch is more of a state-of-the-art dessert!

One important question you might have is if you will be able to use pancake mix as a baking mix. It is likely that you are already aware of the fact that you can use various baking mixes to make pancakes. Typically, you will want to add a dash of sweetener in order to make the pancakes a bit sweeter than biscuits, for example.

In fact, ingredient wise, pancake and baking mixes are quite similar. Both mixes contain several things: flour, a type of leavening ingredient (such as baking soda), as well as sometimes a few additional ingredients, including salt. Nonetheless, baking mixes are a bit more general than pancake mixes because they can be used to make several yummy items, such as biscuits, waffles, pancakes, and so forth. On the other hand, pancake mixes are geared toward pancakes.

If you are wondering what can be made from pancake mix, then this recipe is for you! First, there is absolutely nothing wrong with enjoying pancakes that are derived from a store-bought mix. No judging here! Having a mix on hand that already incorporates the dry ingredients is convenient and saves time, especially when you are serving several people.

The cake recipe we will discuss here is simply an additional way to use pancake mix. Keep in mind that you will need some extra ingredients to go with the pancake mix, including blueberries. Now, here are some helpful tips that have been beneficial to me!

  • While this recipe lists blueberries, other types of berries can be used, including strawberries and raspberries. My personal suggestion would be to chop up berries that are larger into more bite-sized pieces.
  • Vanilla extract is used in this recipe to provide an extra dash of flavor. However, swapping this out to use lemon extract gives it even more flavor and provides a nice taste as well.
  • This delicious blueberry cake can be made vegan by easily using a vegan pancake mix and a milk that is nut-based.

What Pairs Well with a Pancake Mix Cake?

I view it as a large pancake that is baked like a cake, and so my suggestion is to doll it up with some sugar-free pancake syrup, or even sprinkle some sugar-free powdered sugar on it!

Keep in mind this tasty Blueberry Bundt Cake uses frozen blueberries, making it something that can be made year-round. It is delicious, dense, moist, and easy to remove from the pan.

To be quite honest, baking is usually a hit or miss with me. Now, I have a few recipes I keep coming back to because I know I can nail them. I definitely do not like spending time and money on a new recipe that may or may not turn out well! But I must say, this one is an absolute homerun.

Not only can this savory Blueberry Bundt Cake be a dessert cake, but it can also be a “coffee cake” for breakfast. You may even bake it the night prior so that you have something amazing and delicious ready to pair with a cup of hot coffee in the morning! Also consider putting some fresh fruit on the side to add a nutritious flair.

Baking Tips and Tricks:

  • Considering using a pan that is like this one for the best results.
  • In addition, take time to butter and flour the pan so the cake comes out rather easily.
  • Personally, I prefer using this kitchen gadget that helps sprinkle flour in the pan.
  • Honestly, this gadget is also quite nice when it comes to sprinkling powdered sugar on top of many different kinds of cakes.
  • Since the batter is quite thick, the best thing to do is scoop the batter into the pan instead of pouring it.
  • When you use a cake tester like this one, it helps you know just how done the cake actually is.
