There are evenings that you want just a meal that is comforting. Of course it has to be tasty and easy to make. When you do not have the time to make a huge meal, a pot of Meatball Soup is the perfect plan.

This soup is filled with vegetables, pasta, Italian flavored meatballs and a savory tomato based broth.

This pure comfort food can be a complete meal as is, or serve it up with some crispy Garlic Toast. Some soft dinner rolls would be ideal to soak up the delicious broth also.

When I said the meal is quick, you can start it and serve it in less than an hour. Which means this is the perfect meal for those busy days, the days when you are not feeling your best or just because the family loves this so much.

            Can I use homemade meatballs?

You can make your own meatballs, you could use Turkey or Pork or even Chicken meatballs if you are lucky enough to find them frozen in your local store.

            Is Farfalle Pasta the best choice?

I prefer to use this pasta over any other. Farfalle Pasta is common in the Italian regions which makes it the most popular choice.

            How would I store the leftovers?

Once the Meatball Soup has cooled completely, you can place it into an airtight container and store it in the refrigerator for up to 4 days. You could also store it in the freezer for up to two months.

What do you need to make Meatball Soup

            Meatballs:

            1 pkg Frozen ready made meatballs OR

            1.5 pounds of lean ground beef

            ¼ cup yellow onion, finely diced

            2 Garlic Cloves, minced

            2 tsp Worcestershire Sauce

            1 egg

            ⅓ cup Italian flavored bread crumbs

            ¼ tsp Black Pepper

            ½ tsp Salt

            Soup:

            1 medium onion, white, chopped

            2 carrots, large, peeled and sliced

            3 stalks Celery, sliced

            1 ½ cups green Beans, cut in 1 to 1 ½ inch segments

            1 tsp Oregano, dried

            1 tsp Parsley Flakes

            ½ tsp Garlic Powder

            ½ tsp Onion Powder

            ½ tsp Basil, dried

            6 cups Beef Broth, preferably Low Sodium

            1-14.5 ounce can Fire Roasted Tomatoes

            1 -8 ounce can Tomato Sauce

            Salt and Pepper to taste

            ¾ cup Farfalle Pasta, I prefer bowtie

How to make Meatball Soup

FIRST STEP:

Mix the ingredients for the meatballs in a large bowl

Using a cookie scoop, form the meatballs and place them on a parchment lined baking sheet

Place 2 tbsp Olive Oil in a skillet and heat over medium heat. Gently cook the meatballs in batches until thoroughly cooked. Once cooked, remove meatballs and set on a plate to the side

SECOND STEP:

In a Stockpot over medium high heat, add Olive oil and then add in the onion, celery and carrots. Add in the Green Beans when the onions start to become translucent.

Sprinkle with salt and pepper, as desired

THIRD STEP:

Add in the Parsley and remaining herbs and simmer for another 3 to 5 minutes, stirring constantly

Add in the Beef broth, tomato sauce and the undrained Fire Roasted Tomatoes

Bring to a boil then reduce heat and add in the meatballs and the pasta

FOURTH STEP:

Continue to simmer for 10 minutes, until the pasta is al dente

Serve hot with soft dinner rolls or Garlic Toast
