Orange-Cranberry Yogurt Loaf

This is beautiful! It is perfect for the day after Christmas. I love those flavors together.

That glaze! And you can just see how moist that cake is! Perfect for the holidays!

Such a huge fan of cranberry orange goodies. It was fantastic!

I absolutely LOVE cranberries and orange together and yes, since this has Greek yogurt it it totally acceptable for breakfast 🙂

What do you need to make Orange-Cranberry Yogurt Loaf

Orange Cranberry Yogurt Loaf

2 cups plain flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 cup caster sugar

¼ cup unsalted butter, melted

1 egg

½ cup Greek yogurt

½ cup buttermilk

1 tsp vanilla extract

2 cups cranberries

1 tbsp orange zest

Orange Icing

1 cup icing sugar

2 tbsp orange juice

How to make Orange-Cranberry Yogurt Loaf

FIRST STEP:

Preheat an oven to 350F and grease a loaf tin.

In a bowl add the cranberries and two tablespoons of flour, toss together to coat then set aside.

SECOND STEP:

In a mixing bowl combine the plain flour, baking powder, baking soda, salt and caster sugar.

Into a second mixing bowl whisk together the melted butter, egg, yogurt, buttermilk, vanilla extract and orange zest.

THIRD STEP:

Gradually pour the bowl of dry ingredients into the bowl of wet ingredients, stir with a spatula to form a thick batter.

Then fold the floured cranberries into the cake batter.

FOURTH STEP:

Pour the cake batter into the greased loaf tin and place in the oven for 1 hour.

After 1 hour remove the yogurt loaf from the oven and let it cool for 10 minutes.

FIFTH STEP:

Then turn the yogurt loaf out from the tin and place on a wire rack.

As the loaf cools prepare the orange icing, in a bowl stir together the icing sugar and orange juice until a loose consistency.

SIXTH STEP:

Use a spoon to generously drizzle the orange icing over the surface of the loaf.

Allow the icing to set then cut the loaf into thick slices and serve.
