I am flooded by childhood memories each time I bake these cookies! Those hot summer days of chasing the ice cream truck to get an orange Creamsicle and hoping we get there before they run out always turned into a race between all kids in the neighborhood.

Now, sadly, I am too old to chase the Ice Cream Truck, however, I still love the flavor of Orange Creamsicles!

What do you need to make Orange Creamsicle Cookies

            1 package, 3 ounce orange flavored gelatin

            1 box white Cake mix

            ¼ cup vegetable oil

            2 eggs, large

            1 cup white chocolate chips

How to make Orange Creamsicle Cookies

FIRST STEP:

Preheat the oven to 350*. Line two baking trays with parchment paper

In a large bowl combine the white cake mix, the orange gelatin mix, the eggs, and oil

Continue to beat until you have a smooth consistency, not too thick

Fold in 1 cup of white chocolate chips

SECONDSTEP:

Using a medium cookie scoop, place scoops of dough about 2 inches apart on the baking trays

THIRD STEP:

Place the trays in the oven and bake for 8 to 10 minutes, just until the edges become slightly golden

Allow to cool on the baking trays before transferring to an airtight container
