Potato Soup with Kielbasa

This is a soup recipe that is perfect for the winter months. It is cheesy, filled with potatoes, satisfying and savory. This soup is very easy to make and stores wonderfully.

It can be used as a precursor to dinner or as dinner itself. I like to serve this soup with some crusty bread or garlic toast.

When I first tasted potato soup, I found it rather dull and knew that I had to do something to make it more exciting, more tasty and more filling.

This is the dish I came up with. I absolutely love it! Adding in the cut kielbasa was the perfect choice, as it made it more of a filling dish.

            Can I use a meat other than Kielbasa?

You could use any type of sausage you would like. I have even cooked up a pound of ground sausage and added that in. I have also used ground beef, chicken and turkey.

            How do I store this soup?

This soup should be cooled completely and then placed into an airtight container. It will last in the refrigerator for up to 5 days.

            Can I freeze the soup?

You can, however, there will be a slight difference in the appearance when the soup thaws, maybe a slight separation in the broth.

What do you need to make Potato Soup with Kielbasa

            1 pound kielbasa sausage, cut into ½ inch slices

            ½ cup finely diced onion

            ½ cup finely sliced celery

            1 ½ pounds potatoes, cut into 1 inch cubes

            ½ cup diced carrots

            2 cloves of garlic, freshly minced

            1 tbsp Olive Oil

            4 cups Chicken Broth

            2 cups milk

            ½ tsp salt

            ¼ tsp black pepper

            ½ cup Parmesan Cheese, shredded

            2 cups Cheddar Cheese, shredded

            ¼ cup Parsley, chopped for garnish

How to make Potato Soup with Kielbasa

FIRST STEP:

Heat the Oil in a Dutch oven, add the sausage and cook for 5 to 6 minutes

Stir the meat often, when done remove the meat from the pot and set to the side

In the same pot, add the onions, garlic, celery and carrots and saute for 3 minutes

SECOND STEP:

Pour the chicken broth into the Dutch Oven and then add the potatoes.

Cook for 15 minutes or until the potatoes are fork tender

Next add the cooked sausage and the milk, then add the cheddar cheese and the parmesan cheese

THIRD STEP:

Cook over low heat until the cheese has melted

Remove the pot from the stove and serve immediately
