Refreshing Cucumber Salad

Share or Save for Later

This salad is the most refreshing salad one could have on a summer’s day. It is light, it is refreshing and it is meant to be eaten cold. This is the perfect salad to serve when you grill burgers, chicken or even pork chops.

This is one of the most popular salads that are eaten in Germany. While living in Germany, I have seen it served with the vinegar version and in a creamy version. They are both delightful.

Although there are many versions of this salad and different dressings, the one I have included here is my favorite. Even though this is considered a quick to make salad, this recipe does not lack flavor. This German version is also a healthy version.

The cucumbers are a hydrating vegetable, and there is no sour cream or mayonnaise in the recipe. As a popular side dish, it made its way to the United States and became extremely popular.

Frequently Asked Questions:

What kind of cucumber is the best to use for this salad?

The English cucumber has fewer seeds and more flavor than the other cucumbers. For that reason, I enjoy using them when I make this salad.

Do I need to sweat the cucumbers?

Sweating a vegetable is when you use salt to draw out the excess moisture. That is not a necessary step for this recipe.

Can I store this salad?

The cucumber salad will be good when stored in the refrigerator for 2 to 3 days.

Can I make this salad in advance?

You can certainly slice the cucumber and the red onion and place them in a tightly closed container, in the refrigerator. This can be done 3 to 4 hours in advance. The dressing can also be made in advance and kept in a separate closed jar in the refrigerator.

Can I make this a day ahead?

If you want to let it sit overnight, place the cucumbers with the salt into a colander and let it drain. The next day, drain the liquid and then make the rest of the salad.
