A yummy dessert is coming up for your tummy! We have all heard of poke cakes, but here is a spin on those old fashioned poke cakes. Something that will delight each taste bud in your mouth and have you asking for more. This recipe includes a fluffy cheesecake mousse, graham crackers and a tasty vanilla cake. You can use a box mix for the cake, or you can go ahead and make a homemade version to up the level of taste.

Would you believe there are actually people who have never heard of a poke cake? To me this is unbelievable! I swear they have been around longer than me. Poke cakes are exactly what they sound like. The cake is baked and then using a fork or a wooden spoon, you poke lots of holes into the cake. On the top of the cake, you will drizzle milk, liquid jello, pudding or even cheesecake.

This is such an addictive, yet refreshing dessert. The family will love it and the neighbors will be screaming for a copy of the recipe. Again, do not be afraid to mix things up and try new ideas for your next poke cake.

The possibilities are almost endless. Can you imagine what a chocolate cake with chocolate pudding and whipped cream would taste like, topped with chocolate shavings? Use white chocolate in place of milk chocolate to add some color to it. Yum Yum!

1 box vanilla cake mix, made according to the directions. 1 package strawberry jello

½ cup strawberries, sliced and mixed with a little sugar and slightly mashed

1 box instant cheesecake pudding mix made with two cups milk, according to package directions

12 ounces of whipped topping Fresh Strawberries for garnish

How to make Strawberry Poke Cheesecake:

FIRST STEP:

Preheat the oven to 350*

Spray a 9 x 13 baking pan with non stick spray

SECOND STEP:

Prepare the cake as directed on the box

Pour into prepared pan and bake for 30 minutes or until toothpick comes out clean

THIRD STEP:

Cool the cake completely

Using handle of wooden spoon, poke holes in the cake randomly

FOURTH STEP:

Prepare the jello as directed and pour over the cake

Place in the refrigerator and chill for one hour

FIFTH STEP:

Prepare the cheesecake pudding as directed and add in the strawberries

Chill one hour in the refrigerator

Top with whipping cream and garnish with fresh strawberry slices
