I made this tonight and it was so simple and delicious and hardly any clean up!

Fantastic! Love what you did with it and so glad it worked out so well for you.

This is the second time I have fixed this. I really like cutting the peppers up and fixing this on the stove. It was delicious!

Very easy and very tasty. This was a bigger hit in my house than traditional stuffed peppers.

What do you need to make Unstuffed Pepper Skillet

1 ½ lbs. Ground turkey

1 C. Riced cauliflower

1 Tbsp. Olive oil

½ Onion chopped

½ Red bell pepper chopped

½ Green bell pepper chopped

2 tsp. Minced garlic

1 C. Fire roasted tomatoes

½ tsp. Dried thyme

½ tsp. Dried basil

Salt and pepper to taste

How to make Unstuffed Pepper Skillet

FIRST STEP:

Place the olive, ground turkey, onions and peppers into a skillet over medium high heat on the stove.

Sauté until the meat is browned and the vegetables have softened.

SECOND STEP:

Reduce the heat to medium and stir in the garlic, thyme, basil, fire roasted tomatoes, cauliflower rice and salt and pepper to taste.

Cover and simmer for 5 minutes.
