I love to make anything in the Crockpot. It’s the easiest way to get dinner on the table, meal prep without stress, and more. You can make everything from breakfast to dessert in the slow cooker, I make this breakfast casserole regularly!

Here is what you’ll need to make this Crockpot chicken and broccoli:

This is a simple crockpot casserole recipe that can be made in advance as well. If you want to meal prep this recipe just wait to put on any crunchy toppings like fried onions or crackers!

Slow cooker chicken and broccoli reheats like a dream. It’s simple to keep in the refrigerator during the week so everyone has an easy meal to pop into the microwave for warm lunches or simple dinners!

You’ll need boneless skinless chicken breasts, onions, chicken broth, and heavy cream. We’ll use garlic powder, dried oregano, unsalted butter, broccoli, and egg noodles. For some toppings make sure you have shredded cheddar cheese, Ritz crackers, and parsley!

You can of course use boneless skinless thighs if you prefer in place of the chicken. You can also used any kind of chicken if you want to cut it into bite sized pieces!

The same goes for the crackers, use whatever kind you like or have on hand or none at all! It adds a nice bite to the softer textures of this recipe but they’re not essential.

How to make chicken and broccoli casserole in the slow cooker:

Add the cut chicken breast, onion, broth, heavy cream, garlic powder, and oregano to the slow cooker. Cover and cook on high until chicken is cooked through to 165 degrees internal temperature. This should take approximately 3 to 3 ½ hours.

Stir in broccoli and noodles, cover and cook until pasta is tender, 20 to 30 minutes more.

Stir in butter, then top the casserole with cheese. Cover and cook until the cheese is melted, this should take approximately 3 to 5 minutes.

Garnish with crushed Ritz and parsley before serving.

Ingredients

  • 1 1/2 lb. boneless skinless chicken breasts, cut into bite size pieces
  • 1 medium onion, chopped
  • 2 c. low-sodium chicken broth
  • 1 c. heavy cream
  • 1 tsp. garlic powder
  • 1 tsp. dried oregano
  • 1 head broccoli, cut into bite size pieces
  • 1/2 lb. egg noodles
  • 2 tbsp. Unsalted butter
  • 1 c. shredded cheddar cheese
  • Round Crackers (like Ritz) crushed for garnish (optional)
  • Parley, chopped for garnish (optional)

Instructions

  1. Add the cut chicken breast, onion, broth, heavy cream, garlic powder, and oregano to the slow cooker. Cover and cook on high until chicken is cooked through to 165 degrees internal temperature. (approx 3 to 3 ½ hours).
  2. Stir in broccoli and noodles, cover and cook until pasta is tender, 20 to 30 minutes more.
  3. Stir in butter, then top the casserole with cheese. Cover and cook until the cheese is melted Approx.3 to 5 minutes.
  4. Garnish with crushed Ritz and parsley before serving.
