Making meals in the Crockpot is my favorite! It takes all the hard work out of meal prepping and I love knowing that when I get done with work for the day we will have a tasty meal ready to go.

This shredded chicken is made in the slow cooker which means that the chicken is soft, tender, and moist. The Asian inspired sauce that we’re using makes it even more flavorful and delicious.

I use a liner whenever I’m making anything that might get stuck on. It makes cleanup a breeze and keeps everything easy to remove! You’ll need a good metal serving spoon to get this recipe served up pretty and easily.

When it comes to Crockpots I have MANY…it’s an obsession of mine, I’m not too proud to admit. I like to have options when it comes to sizes. A nice 6 quart is useful for all kinds of recipes. You can also use a 4 quart for many recipes and these Little Dipper crockpots are perfect for dessert or fondue!

Here’s what you’ll need to make shredded chicken in the Crockpot:

This recipe uses a few more ingredients than we normally like BUT since the slow cooker is doing all the work for us and we’re just mixing things up it all works out in the end.

You will need boneless skinless chicken breast, honey, ketchup, soy sauce, oregano, red pepper flakes, minced garlic, cornstarch, water, toasted sesame seeds, and chopped scallions for serving.

You will need some cooked rice for serving as well (or you can pair this with noodles) whatever you like to serve under the chicken and sauce will need to be prepared separately. We’re just making the chicken in this recipe!

How to make Asian Crockpot shredded chicken:

Spray the liner of a 6qt slow cooker with cooking spray.

Add chicken breast to the bottom.

In a small bowl, whisk together honey, ketchup, soy sauce, oregano, red pepper flakes, garlic, and ginger.

Pour over chicken breast and cover with lid.

Cook on low for 6 hours.

Let the chicken rest for 10 minutes and then remove chicken to a plate to shred.

Set the slow cooker to high so it comes to a boil.

Mix cornstarch and water in a small cup and that whisk into the sauce until thickened.

Place shredded chicken back into the slow cooker and toss with the sauce.

Serve over a bed of rice and top with scallions.

Ingredients

  • 4 boneless skinless chicken breast
  • ⅓ cup honey
  • ⅓ cup ketchup
  • ⅓ cup soy sauce
  • ½ tsp oregano
  • ¼ tsp red pepper flakes
  • 6 cloves minced garlic
  • 1 tsp minced ginger
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1 tsp toasted sesame seeds
  • Chopped scallions and rice for serving

Instructions

  1. Spray the liner of a 6qt slow cooker with cooking spray.
  2. Add chicken breast to the bottom.

This chicken was absolutely delicious! I didn't use the slow cooker because I was short on time, so I just boiled my chicken in the pressure cooker then shredded it, placed the sauce on top and heated briefly in a pan on top of the stove. Because there were no juices from the chicken, I was able to skip the step using water and cornstarch. My family ate it over rice with sliced green onions on top, and it was a hit for my husband, 6 & 4 year olds, and myself. I'll definitely be making this one again!

This recipe is a little salty for my taste so I will tweak that if I make it again. I used 3 large boneless, skinless breasts in my 6 quart cooker. I wish I had added some chicken broth as there wasn't enough sauce for the amount of shredded chicken I had. Perhaps stating the weight of your breasts instead of how many would be helpful. I will keep this recipe to try again but I probably won't try any of your others because I found d navigating your site to be cumbersome. Thanks for your work.
